What aspects of a character really make them come alive and help with game immersion? Accents? Quirks? Something else entirely?

I think it's relationships with other characters. I played a game called Fiasco recently and characters were determined only by how they related to other characters, and everything else just fell into place. It makes me think character creation in every other game I've played is fundamentally flawed.

Yeah, Fiasco was a blast.

lookrobot.co.uk/2013/06/20/11-ways-to-be-a-better-roleplayer/I just read this. This is awesome wrapped up in a to the point article. I think everyone who plays any LARP should take a look. I thought back and I do not do all of these things, yet, and I can see times where I was failing at playing because of not doing these things.
